Celiac Sprue Disease

Celiac disease is a digestive disorder that causes damage to the small intestine. People with this disease are allergic to gluten, a protein found in many common ingredients and foods. Their immune systems attack the small intestine when gluten is ingested. Given the pervasive presence of gluten in the modern Western diet, it can be a challenge to live a gluten-free diet, but for those with this disease it is essential to do so.
